摘要
以玉米淀粉为原料,用酶水解法研究高吸油率玉米多孔淀粉的形成,在研究单因素的基础上,优化了制备玉米多孔淀粉的工艺条件。实验结果表明:在α-淀粉酶、糖化酶之比为1∶3,酶用量1.5%,pH5.0,温度55℃,时间18h的条件下,得到了吸油率较高的多孔淀粉。
The formation of porous corn starch with high oil adsorbing rate was prepared from corn starch as raw material by enzymatic hydrolysis method. The technological conditions for preparation of the porous corn starch were optimized based on single factor level. The experimental results showed that the porous starch with higher oil adsorbing rate could be obtained under the conditions of 1:3 weight ratio of α-amylase and glucoamylase, enzyme concentration 1.5% , pH 5.0, temperature 55℃ and time 18 h.
