基因工程乳酸菌在食品发酵生产中的应用前景

摘要 介绍了利用DNA重组技术将具有特定功能的外源基因导入乳酸菌受体,改善菌株在噬菌体抗性、产细菌素、胞外多糖等生理特性的最新进展,以及在食品发酵生产方面的应用前景。
