摘要
食品的风味是由食品的香味和滋味表现出来,常见水果、蔬菜、乳制品和肉的香味是由特定的化学物种散发出来的,食物的甜、苦、酸、咸、辣和涩等滋味也是由特定的化学物种决定的.从化学角度分析了食品的香味与滋味的化学物种组成及化学结构特点.
Food flavor is displayed by food fragrance and taste. The fragrance coming from common fruit, vegetables, dairy products and meat taste is sent out by the specific chemistry species.The food taste such as sweet,bitter,sour,salty,spicy and astringent is also decided by the specific chemical materials. Chemical compositions & chemical structure characteristics of food flavor are analyzed in a chemistry view.
