结晶紫阻抑光度法测定果蔬中V_c的含量

摘要 目的建立结晶紫阻抑光度法测定果蔬中Vc的含量。方法以结晶紫为抑制剂,加入结晶紫后Vc的吸收峰有明显的降低,建立了一种测定Vc含量的新方法。结果Vc量在1.0~50 mg·L^-1范围内服从比耳定律,回收率为97.2%~99.0%,相对标准偏差0.35%~0.95%。结论该方法用于测定果蔬中Vc的含量,结果令人满意。  Aim To establish the inhibition-spectrophotometry method for determining of vitamin C in the fruits and vegetables.Method Methyl violet was used as inhibitor,after we added methyl violet into solution the absorbable peak of vitamin C obviously fell.A new spectrophotometric method for determining vitamin C was established.Results The linear range was 1.0~50 mg·L^-1.The recovery was 97.2%~99.0% and RSD was 0.35%~0.95%.Conclusion The method had been applied to the determination of vitamin C in the fruits and vegetables with satisfactory results.
