摘要
淀粉颗粒的结晶性质及其非晶化处理对淀粉的化学改性具有十分重要的理论和实际意义。从淀粉颗粒的结晶结构和非结晶结构出发,介绍了淀粉颗粒的结晶性、X射线衍射图样和非晶化处理方法。并对提高淀粉反应活性的非晶化方法及其存在的问题进行展望。
Crystallinity properties and non-crystallization processing of starch granule mean importance to starch modification. According to crystalline and amorphous structures of starch granule, the crystalline properties, X-my diffraction patterns and non-crystallization processing methods of starch granule are introduced in this paper. And non-crystallization methods to improve starch's reacting ability are reviewed with some problems pointed out.
