摘要
以丢酒糟为原料,生产膳食纤维;以保加利亚乳杆菌和嗜热链球菌生产发酵型酸乳;以发酵酸乳、膳食纤维、低聚异麦芽糖等调配益生元酸乳饮料。讨论了膳食纤维的提纯工艺、酸乳的发酵条件,通过试验,使酒糟的纤维得以利用,同时生产出了一种具有保健作用的饮料。
Dietary fiber was made from distiller grains, fermented yoghurt was produced with Lactobacillus bulgaricus and Streptococcus thermophillus, and a probiotics yoghurt drink was formulated from the fermented yoghurt, dietary fiber, isomalto-olijosaccharide and so on. The technology of purifying dietary fiber and the conditions for fermenting yoghurt were discussed. Through experiments, dietary fiber from distiller grains could be used to make a new health drink.
