摘要 环状糊精葡萄糖基转移酶是催化淀粉等合成环状糊精的酶,环状糊精由于具有特殊的理化性质,能将多种化学物质包接在其环形空隙中,因此在食品等领域有着广泛的应用前景。本文对环状糊精葡萄糖基转移酶的来源、酶学性质、作用机理、筛选及分子生物学方面进行了系统的综述。 Cyclodextrin glucanotransferase (CGTase) is an important industrial enzyme used to produce cyclodextrin. Due to the extraordinary structure of cyclodextrin, it has been widely applied in food, pharmaceutical, chemical, agricultural and environmental industries. The present review attempts to summarize the reported data concerning the source, characteristics, mechanism, screening and the molecular biology of the enzyme.
