水溶性红曲黄色素与2种天然黄色素的稳定性比较

Comparison of stabilities between water-soluble Monascus yellow pigment and 2 natural pigments

测定和比较了水溶性红曲黄色素与栀子黄色素和胡萝卜素对热、还原剂、氧化剂和光的稳定性,结果表明,水溶性红曲黄色素具有较高的着色力,其稳定性与胡萝卜素相近,对热、还原剂和氧化剂较稳定,但是对光的稳定性较差.栀子黄色素除了在中性条件下耐光性稍好之外,其它稳定性均不如上述2种色素.

The water-soluble Monascus yellow pigment was tested and compared with the carotene and the Gar- denia yellow pigment in heat-resistance,redution stability,oxidation stability and light-resistance.It was shown that the water-soluble Monascus yellow pigment had a higher coloring property than the others.Like carotene,it was stable in heat,reductant and oxidant,and was unstable in light.And the Gardenia yellow pigment was low- er than other 2 pigments in stabilities except its light-resistance in water solution.
