摘要
在非水介质中,采用磷脂酶A1——Lecitase Ultra作为催化剂研究了PC的水解反应。经HPLC分析,在不同的溶剂体系中,水解产物亦不同。溶剂和界面的疏水性质是影响产物组成的关键因素。水分含量对反应初速率的影响显著,非极性溶剂中的最大反应初速率大于极性溶剂体系中的。
Hydrolysis of phosphatidylcholine (PC) catalyzed by phospholipase A1 in non-aqueous media was investigated. The HPLC analysis showed that the hydrolysates were different in different solvent systems. Solvent and hydrophobic character of the interface could greatly influence the composition of the hydrolysates. The initial velocity of the reaction was singnificantly affected by the water content, the maximum initial velocity of reaction in non-polar solvent was higher than that in polar solvent.
