介绍了山梨酸及其盐类、苯甲酸及其盐类、脱氢醋酸及其盐类等防腐剂的安全性、鉴别方法及肉制品中使用情况。
The salty, identification, and application of sorbic acid and sorbate, benzoic acid and benzoate, dehydroacetic acid and dehydroacetate in meat products were introduced in this paper.
