燕麦β-葡聚糖酸奶的研制 被引量:4

摘要 将牛乳与燕麦β-葡聚糖提取物混合,经发酵制成酸奶,对混合发酵液比例等工艺参数进行了研究。结果表明,牛乳与1.5%的燕麦β-葡聚糖比例为2.5:1、接种量3%、CMC添加量为0.1%、在42℃发酵5h,可得到感官、组织状态良好的发酵型酸乳。
