调味品是中国烹饪的重要组成部分。调味品的主要作用在于赋予菜肴更好的色、香、味。以味为核心是中国烹饪的显著特征之一。中国菜制作的关键就在于调味。调味品离不开烹饪业,烹饪业是调味品最大的应用市场,更是对调味品进行评判打分的最主要权威。同时,烹饪的发展和创新也必须依靠现代调味品的有力支撑及帮助,两者互为依靠。在实现我国烹饪标准化、科学化和现代化的过程中,现代调味品的作用和优势将会显得越来越重要。
Flavorings are an indispensible part in Chinese cuisine. Their main function is to give the dishes more beautiful color, more fragrant smell and more delicious taste. The focus of flavor is one of the characteristics in Chinese cuisine. The key to making Chinese dishes consists in flavoring. So flavorings are closely related to cuisine business and cuisine business is the biggest market where flavorings are applied. Moreover, cuisine business is the main authority that grades flavorings. Meanwhile, the development and the creativity of cuisine also rely on the support and assistance of the present--day flavorings and vice versa. In the course of the realization of standardization and modernization of Chinese cuisine, the role and advantages of flavorings will become more and more important.
