摘要
研究了双酶法制备麦溪鲤蛋白水解液。采用枯草杆菌中性蛋白酶和木瓜蛋白酶同时加入的方式,得到麦溪鲤蛋白水解液的水解率为72.42%。最佳的工艺条件为温度50℃,酶量均为2%,底物:水均为1:2.5,水解时间5.5h。
Ab Protein hydrolysate preparation from Maixi carp was studied with double enzyme hydrolysis. When neutral protease from Bacillus subtilis and papain were co-added, the enzymatic hydrolysis rate of Maixi carp protein reached 72.42%. The optimal production processing conducted at 50℃ for 5.5 h with the addition of 2% either enzyme and 1:2.5 ofsubstrate and water.
