摘要 确定了中性蛋白酶、木瓜蛋白酶单酶酶解蓝圆鲹蛋白的适宜条件,比较了单酶与双酶的复合酶解效果,利用正交试验确定了双酶复合酶解的最佳水解条件。结果表明:木瓜蛋白酶和中性蛋白酶同时加入酶解蓝圆鲹蛋白的效果最好,最佳的水解条件下的酶解液中氨基酸态氮含量可达2.48g/L、氮回收率为91.27%。 The optimal hydrolysis conditions of the Decapterus maruadsi by neutral protease and papain were obtained. The hydrolysis effects of neutral protease and papain singly and double were compared. The conditions of two enzymes were studied by the orthogonal experiment. The results indicated that the effect of hydrolysis was the best by adding papain and neutral protease simultaneously. Under the optimal conditions, the content of amino acid nitrogen was 2.48 g/L in hydrolysis solution, the recovery rate of nitrogen was 91.27 %.
