摘要 热处理对乳制品中的营养成分影响很大,不同的热处理对营养成分的影响不同。介绍了乳制品生产中不同热处理方式对乳中营养成分的影响,并对其营养成分的检测方法进行了综述。 The heat treatment is frequently applied in dairy processing. Heat treatment influences the nutritional of dairy greatly. The article introduces the influence of heat treatment on nutritional components, detection and control the quality of dairy in accordance with the degree of the impact on dairy.
