摘要 设计了100 kV/cm的高场强脉冲电场(PEF)杀菌系统,以荧光假单胞菌为试验靶细胞,经PEF作用180 s,在透射电子显微镜(TEM)下观察处理前后的对比情况,发现经PEF处理过的菌体细胞壁发生了破坏,细胞膜上形成不可修复的穿孔,细胞内含物和细胞碎片泄漏,导致细胞质和细胞核物质的流失,致使细胞死亡。结果表明,所设计的PEF杀菌系统可用于液态食品的杀菌处理实验。 This experiment designed the pulsed electric fields (PEF) of high field intensity of 100kV/cm sterilization system, and used fluorescent pseudomonas as target cell, which was operated 180s in the PEF, by observing the difference of the bacteria before and after the disposal by using the TEM, it is found that the cell walls of the treated bacteria were broken, and irreversible perforations were formed on the cell membrane and in the mean time, the cell inclusions and cell fragments were leaked. The cell died as a result. The results showed that: the PEF sterilization system designed can be used for liquid food sterilization experiments.
