精心勾调方得上品——有关白酒勾调的几点体会

摘要 白酒勾调包括组合、尝评和调味。白酒原酒经勾调可实现酒质、标准统一,产品质量稳定。勾调过程应特别注意:①精心勾调;②将感官、色谱及常规分析相结合;③重视勾调过程的数据记录;④调味过程中要时刻注意味觉的转变。(孙悟) Liquor blending covers blending, tasting and flavoring. Liquor blending could upgrade liquor quality (realizing the unity of liquor quality and liquor standards) and maintain stable liquor quality. The following points should be highly valued in liquor blending: 1. careful blending; 2. sensory analysis, chromatographic analysis and common analysis combined together in the blending; 3. pay more attention to the data records in the blending; 4. pay more attention to taste change in blending process.
