摘要
目的研究陕西扁桃蛋白的氨基酸组成以及扁桃仁中的微量元素,以评价陕西扁桃仁的品质。方法采用氨基酸自动分析仪和原子吸收等方法分别进行氨基酸测定和元素分析。结果陕西蒲城产扁桃仁中含有18种氨基酸,总量为23.21%,8种人体必需氨基酸总量6.86%,其他具有特殊药理作用的氨基酸如谷氨酸、精氨酸、天冬氨酸及甘氨酸等含量也很丰富;扁桃仁中含有9种人体所需的矿质元素,含量大小依次为K>P>Mg>Ca>Na>Fe>Zn>Mn>Cu,其中K,Ca,Fe,Zn的含量分别为6 047.0 mg/kg,2 286.0 mg/kg,54.1 mg/kg,33.4mg/kg;未检出Pb,Cd,Hg,As等有害元素。结论扁桃仁属于高K,高Ca,富Fe,富Zn,含优质氨基酸和蛋白、不含Pb,Cd,Hg,As有害元素的健康食品。
Aim To study and appraise the almond kernel by analyzing amino acids and trace elements in the almond kernel in Shaanxi. Methods The amino acids were analyzed by the Amino Acid Analyzer and the trace elements were determined by the methods such as Atomic Absorption Spectrometry. Results There are 23.21% eighteen amino acids and 6.86% eight amino acids being indispensable to body in the almond kernel, and other active amino acids such as glutamic acid, arginine, aspartic acid, glycin, histidine are also rich in it. There are nine abundant mine elements, the content of which is K 〉 P 〉 Mg 〉 Ca 〉 Na 〉 Fe 〉 Zn 〉 Mn 〉 Cu, and in which the content of K,Ca,Fe and Zn is 6 047. 0 mg/kg,2 286. 0 mg/kg,54. 1 mg/kg,33.4 mg/kg, and the harmful elements: Pb,Cd, Hg, as were not discovered in healthy food without harmful elements, which and Ca. the kernel. Conclusion The almond kernel is a kind of excellent contains high quality amino acids and protein, and richer Fe, Zn, K and Ca.
