摘要
酶制剂是生产淀粉糖品的重要原料,特别是对糖化工艺中麦芽糖浆纯度的提高起了十分重要的作用。综述了当前麦芽糖浆生产中使用的各种酶制剂的性质、作用机理、使用方式;对其作用效果进行了对比;对酶制剂在淀粉糖中使用的新研究进展进行了介绍。
Enzymes are one of the most important materials for manufacturing starch sugar. They have contributed great- ly to increase the purity of the maltose in the saccharified solution. Someenzymes that used in the production of maltose were introduced in this paper,And the properties,mechanism of action, usage mode of the enzymes were summaried. Then the effects of enzymes in saccharifying were analyzed. The author introduced some new research progress on the use of enzymes in the production of maltose.
