利用谷氨酰胺转胺酶生产乳清浓缩蛋白膜的初步研究 被引量:8

摘要 初步研究了利用谷氨酰胺转胺酶制成乳清浓缩蛋白(WPC79)膜的成膜条件,各因素对膜的影响。结果表明,膜的最佳干燥温度为室温(20℃),乳清浓缩蛋白浓度为12%,甘油浓度为4%,TG添加量为20μ/g,成膜较为理想。 The film of whey protein concentrate(WPC79) with TG is studied in this article, including of the condition for forming film, the influence of various factors to the film. The results indicated that, dried at 20℃, concentration of WPC 12%, glycerin 4%, TG20 μ/g, the film could act as good appearance.
