摘要 彝族酒文化是中国酒文化中的一个组成部分,通过对凉山彝族酿酒工艺的考察,发现彝族人的酿酒技术是科学的,酿造的酒的确是绿色酒,但酒曲的质量比较差,酒产率很低。因此,许多地方还有待于进一步改进。 The wine culture of Yi ethnic group is a part of Chinese wine culture. Through observing the process of wine making of Liangshan Yi ethnic group, the author finds that the wine making technique of Yi ethnic group is scientific, and the wine they make is green wine. But the quality of yeast is poor, so the output of wine is not very high. Therefore, many aspects of process of wine making need further improved.
