论述CLA的天然来源及活性成分,牛乳脂CLA的来源,牛品种、季节变化、日粮中不同脂肪来源、饲喂方式、分子生物学与细胞学对牛乳脂CLA含量的影响,加工贮存条件、加工中添加物和发酵菌种对乳制品中CLA含量的影响及CLA应用现状和安全性评价等方面。
The article discussed particularly on crude source and active component of CLA, influencing factors of CLA content in cattle' milk fat, such as cattle breed, seasonal change, the different fat source of daily grain, the different feeding mode, molecule biology and cytology. The processing imbursement condition, additive substance and zymogen have a certain influence on CLA content of dairy products. CLA application actuality and security appraise were also discussed.
