Fruit vinegar provides all kinds of nutrition which includes amino acids, organic acids, 'minerals, vitamins and other health ingredients etc. It is not only a good king of spice but also agood kind of beverage. Its appearance has solved the problem of fruit surplusand raised the income of peasants to some degree. Meanwhile it has also diversified the fruit products. Although fruit vinegar appearance has more advantages, some negariveproblems were made by some enterprises such as selling fruit vinegar as health product, boasting its curative effect and making fruit vinegar by mixing the vinegar and juice and so on. which make the market in disorder and frustrate the consumer buying activity. Another problem is that there is no national standards and industry standards of fruit vinegar, which makes the supervising department to supervise the market with no technological reference and research department to develop new product with more time and money. Therefore, it is necessary to regulate the fruit vinegar market and establish national and industry standards.
