摘要
对5个竹芋品种产量,淀粉含量和特性研究结果表明:竹芋产量在7500~37500kg/hm^2之间,淀粉含量为10%~15%。品种间淀粉含量不同,淀粉糊化特性也存在一定差异,泰国竹芋和勐养竹芋因产量高且淀粉含量较高而优于其它品种。同时,泰国竹芋的峰值粘度较高,凝胶性较强,硬度相对较小,但其热稳定性稍差。竹芋淀粉与其它薯类淀粉比较,表现为峰值粘度低于马铃薯和芭蕉芋淀粉,但其热稳定性高,淀粉糊硬度低。
Yield, starch content and quality of five Maranta arundinacea L. cultivars were studied. The results showed that yield was 7500 - 37 500 kg/hm^2 and starch content was about 10 % - 15 %. Different starch sources had different gelatinization characteristics. ' Thai maranta' were ' Mengyang maranta' are more superior than other varieties with high yield and high starch content. Meanwhile, the ' Thai maranta' showed high peak viscosity, lower setback, lower final viscosity, but higher breakdown. On the other hand, mamma showed lower peak viscosity, lower breakdown,and lower final viscosity than potato and canna.
