发芽糙米是一种新兴的功能性食品,具有独特的营养与保健功能。发芽糙米产品的开发是提高稻米利用率、优化经济和社会效益的重要途径。本文论述了发芽糙米的功能和作为功能性食品开发的可行性,同时对发芽糙米产品的生产工艺、现状及其开发前景也作了详细介绍。
Germinated brown rice is a novel functional food, and it has the unique functions of nutrition and health. Exploitation of germinated brown rice products is an important way for increasing the coefficiency of utilization of rice and economic performance. This paper discussed the function of germinated brown rice and the possibility of germinated brown rice being used as functional food. At the same time, production technology, the present situation and the future development of germinated brown rice products were also reviewed in detail.
