电子鼻技术对苹果贮藏期的研究 被引量:18

摘要 利用快速气相色谱(GC-Flash)型电子鼻对不同贮藏时间红星苹果的香气进行检测,检测速度快(每次检测不超过5分钟)、重复性好且不破坏样品。所得数据经主成分分析(PCA)、统计质量控制(SQC)、货架期(SL)和气味指纹图谱四种化学计量学的方法进行处理后,果实的香气按照贮藏天数得到了很好地区分,反映了其采后质量的变化过程,预测出红星果实的常温货架期为20天,并用传统的理化指标法进行了验证,结果表明基于化学计量学的电子鼻技术是一种新的检测和分析产品质量的好方法。 The aroma in Red Delicious apple of different stored time was studied by GC - Flash electronic nose. The speed of mensuration was rapidly( no more than five minutes every measurement), the repeatability of the results was very good and without destructive to sample. The results were analyzed by chemometrics method including principal component analysis( PCA), Statistical Quality Control( SQC), Shelf Life(SL) and Scent Fingerprint Analysis. The aroma of fruits was differentiated well, the changing process of fruit quality after harvested was reflected, and we forecasted the shelf life of Red Delicious apple at normal temperature was twenty days. The predicted results were confirmed by traditional physical measurements. It was showed that the electronic nose technology based on chemometrics was a good new method to detect and analyze the quality of products.
