摘要
阐述了高压脉冲电场杀菌装置的一般组成。研制了一台最高输出电压为15 kV的高压脉冲发生器并详述了其工作原理。设计了处理室的结构并对处理室电场分布进行仿真分析。实验结果表明:在此装置作用下,随着电场的增强,杀菌效果显著提高;脉冲数增加3倍,被杀灭的菌落总数提高了近3个数量级;菌落总数残存率最大下降超过3.5个对数。研究表明该装置具有较好的杀菌效果。
The common compositions of a food sterilization system using high voltage pulsed electric field was explained. A high voltage pulse generator with a maximum output voltage of 15kV is developed and its working principle is described in detail. Besides, the structure of the processing chamber was designed and the distribution of electric field in the chamber was analyzed by computer simulation. Experimental results indicated that treated by this apparatus, bactericidal effect can be obviously enhanced by raising electric field and the sum of sterilized bacteria can be increased about 3 orders if the number of pulse is trebled; the greatest survivabilities of the sum bacteria remnant dropped more than 3. 5 log. Research demonstrates that the developed apparatus has a better bactericidal effect than conventional ones.
