超高压番茄红素的抗光敏氧化性初探 被引量:1

摘要 研究了番茄红素超高压处理后的组分变化,通过抗氧化试验,观察不同组分番茄红素的抗氧化效果。采用HPLC法和UV-VIS法分析高压处理后番茄红素组分的变化,采用GC法考察不同结构的番茄红素对油酸和亚油酸的抗氧化作用。结果表明:番茄红素经高压处理(400 MPa,8m in,20℃)后总量变为原来的42.5%,顺式异构体比例从0.3%提高到21.05%;高压处理后番茄红素对不饱和脂肪酸(油酸、亚油酸)的抗氧化效果优于未高压处理的,对亚油酸的抗氧化效果好于油酸。番茄红素顺式异构体的抗氧化效果优于反式异构体的抗氧化效果,有关机制值得进一步研究。 The ratio change in the isomers of lycopene after high pressure processing (HPP) and the photooxidation activity of lycopene after HPP compared with the untreated lycopene were studied. The change of lycopene isomers ratio after HPP was analyzed by HPLC and UV - VIS and the different antiox- idant activities of lycopenes to oleic acid and linoleic acid were determined by GC. Results were as follows:the amount of lycopene decreased by 42.5% after HPP(400 MPa,8 min,20℃ ) , however,the cis - isomer ratio increased from 0. 3% to 21.05%. The antioxidant activity of lycopene after HPP was higher than that of the untreated lycopene. Furthermore, antioxidant activity of lycopene in linoleic acid was higher than that in oleic acid. Antioxidant activity of cis - isomers of lycopene was higher than that of trans -lycopene,and its mechanism deserved further study.
