针对当前人们对亚硝酸盐致癌性的逐步认识,肉制品科研机构及生产厂家一直致力于寻找一种安全可靠的肉制品发色剂。综述了国内外一些新型肉制品发色剂的研究及应用。
As the public awareness of sodium nitrite's carcinogenic action growing, studies on developing a new kind of safe substitute for sodium nitrite have been pursued by research institutes and meat product manufacturers. This article summarized the research progress on new type meat product colorant home and abroad.
