不同加工方式对牛奶中乳铁蛋白的影响 被引量:2

摘要 乳铁蛋白是一种铁结合性糖蛋白,广泛存在于哺乳动物的分泌物中。研究报道,乳铁蛋白具有多种生物学功能。本文就不同加工方式对牛奶中乳铁蛋白的影响进行简要评述。
