摘要
对万安玻璃红鲤的肌肉营养成分分析结果（鲜重百分比）为：蛋白质含量占19．07％，水分78．75％，灰分1．09％。肌肉中含有18种氨基酸，总量为774．59mg／g，其中，有8种人体必需的氨基酸，总量为320．72mg／g；含量较高的有赖氨酸、谷氨酸、门冬氨酸、甘氨酸和丙氨酸，此外，尚含有适量的钾、钠、钙、镁和微量的铜、锌、铁等营养元素。这些表明万安玻璃红鲤是一营养价值较高的优良鱼类品种。
The major nutrition compositions in the muscle of Wan′an glassy red carp, (Cyprinus carpio var. Wan′anensis) have been analysed. The muscle consisted of 19.07% crude protein, 78.75% moisture and 1.09% ash. By analysing the amino acid, there were 18 kinds of amino acids in dry muscle of this fish with the total amount being 774.59mg/g and 8 kinds of them being essential andno acid. The total amount of essential amino acids was 320.72 mg /g, with Lysine, Methionine, Aspartic acid,Glutamic acid, and Glycine being particularly rich. In Wan′an glassy red carp the muscle contains nutritional elements of K, Na, Ca, Mg and microelements Cu, Zn,Fe.
