摘要
本文研究了牛蒡多酚氧化酶的动力学特性,结果表明其最适温度为50℃,最适pH值为7.2,最大反应速度Vmax=105.4[u],米氏常数Km=0.16[M]。本文同时讨论了抑制剂对牛蒡多酚氧化酶活性的影响。
Kinetic charactristics of polyphenol oxidase(PPO)in burdock were studied.The result shows that the optimum pH and temperature are 7.2 and 50℃ respectively,and the maximum velocity is 105.4,the Michaelis constant was 0.16.The effect of inhibitors on the activity of PPO was studied in this paper as well.
