摘要
色值是反映浓缩苹果汁颜色深浅程度和衡量苹果浓缩清汁产品质量的重要理化指标.本文介绍了浓缩苹果汁色值的形成机理和控制方法.
Color value of apple juice concentrate is one of important physical and chemical properties, which can express different degree of juice color changing and evaluate juice quality. The development mechanism and control measures of color value are introduced in this paper.
