不同营养水平对鲁禽3号麻鸡配套系肌肉品质的影响 被引量:7

摘要 研究了不同营养水平对鲁禽3号麻鸡配套系鸡肉理化指标和组织学指标的影响。结果表明:高能量高蛋白水平并不利于肉品的保鲜和蛋白质在体内的沉积;中能量中蛋白水平时肌肉蛋白含量最高;肌肉脂肪含量随日粮能量水平的升高而升高;肌纤维直径随能量水平的升高而增大,中能量水平时肌纤维密度则较大,而日粮蛋白水平对肌肉组织学指标影响不显著(P>0.05)。综合失水率、剪切值、组织学指标和蛋白质沉积等数据,鲁禽3号麻鸡的推荐营养水平为中能量中蛋白组(ME 12.14 M J/kg、CP 17.5%);同时,腿肉的多数性状优于胸肉,而且胸腿肉肉品性状的差异并不因日粮营养水平的变化而改变。 The effects of different nutrient levels on meat physical and chemical indices and histology indices of Type 3 Luqin Spotty Plumage were studied. The results were as follows : the ration with high energy and protein was going against preserving meat and the deposition of protein in body;protein content in meat were highest at the nutrient level of middle energy and middle protein ; fat content in meat rose with energy level increased in ration; meat fiber diameter increased with improving of energy level in ration, and meat fiber density was greater at the middle energy nutrient level, but the effect of defferent protein levels on meat histology indices was not significant( P 〉 0.05 ). At last, based on an overall consideration of water losing rate,shear value, meat histology indices and protein content in meat , we concluded that the nutrient level of 12.14 MJ/kg ME and 17.5% crude protein was suitable to type 3 Luqin most characters of leg meat were better than those of chest meat, and the meat and chest meat didnt change with the nurient level of ration.
