摘要
以山地和平地的玫瑰香葡萄为原料进行酿酒试验,并且对贮藏后葡萄进行酿酒试验。结果表明:山地葡萄的酿酒品质明显好于平地,而贮藏以后则以平地葡萄的酿酒品质较好,采用溶液萃取法提取葡萄酒中的香气成分,用GC/MS法进行分离测定,并对其主要香味化合物进行了分析比较。
Tests on wine making by Muscat Hamburg grape in different habitats and the grape after storage for three months .were carded out. The results showed that the wine quality made by grape in mountainous region was better than in the flat. However, the wine quality made by grape in flat area was the better after storage. The aroma components extracted by solvent extraction and separated by GC/MS were analyzed and compared.
