摘要 目的了解河北省散装食品卫生现状,加强散装食品卫生管理。方法用随机抽样的方法从全省11个市中的4个市随机抽取20家食品超市,采用统一调查表,对其散装食品卫生管理情况进行监督检查。结果20家超市中没有一家超市能做到调查表中的15项检查项目全部合格,存在的主要问题是:过期食品的处理记录不详;从业人员销售直接入口散装食品时口罩、手套及帽子配戴不全或不规范;采购散装食品时证件索取不全;冷藏冷冻设施数量不足或运转不正常。结论我省散装食品卫生状况不容乐观,卫生监督部门一方面要加大执法力度,确保法律、法规及《规范》的实施,另一方面要加强散装食品卫生知识的宣传及培训工作,更好地调动经营者的守法自觉性和主动性,提高消费者的卫生意识和自我保护意识。 [ Objective] To learn the hygienic condition of the food in bulk in Hebei Province and strengthen the hygienic management. [ Methods] 20 supermarkets were randomly selected from 11 cities for the investigation; questionnaire was used to investigate the hygienic condition of the food in bulk. [ Results] None of the supermarkets was totally eligible for all the 15 items in the questionnaire ; the major problems were incomplete record for expired food disposal, unfit wearing of hygienic materials in the selling process, nonstandard certificate for food stock and so on. [ Conclusion] The hygienic condition of the food in bulk in this province is unsatisfactory; hygienic supervision work as well as the consumers hygienic consciousness should be improved.
