摘要
泥螺是生长在我国沿海滩涂的一种软体贝类动物,是沿海特有的烹饪原料。泥螺有油螺和黄螺之分,每年六、七月份是捕螺旺季。泥螺成为餐桌上的佳肴,必须经过泥螺的出沙加工。其烹饪方法除腌、糟外,还可以氽、爆、炒、蒸等,成菜具有滑嫩爽脆、口味鲜香的特点。
Bullacta exarata, a kind of shell mollusk, lives on inshore tidal land as a cooking material popular in coastal region in China. It can be subdivided into yellow spiral shell and grease spiral shell and the best fishing time comes in June and July every year. Removing the sand from bullacta exarata is an initial step taken before cooking and various cooking methods, besides salting and wining, quick - boiling, quick- frying, stir-frying, braising are available. The cooked dish tastes tender, crisp, fresh and delicious.
