摘要 中国儿童的每日膳食中,普遍缺乏蛋白质和矿物质,需要在日常膳食外进行补充。在调查我国儿童目前营养状况的基础上,以儿童喜爱、美味可口和营养丰富的鱼糜制品为原料,通过添加猪肉和儿童易吸收的食品营养强化剂,研制出了无腥味、高品质、高营养性的复合鱼糜猪肉制品。该产品具有弹性好、脂肪含量低和营养丰富等特性。通过正交试验得到儿童营养鱼糜制品的最优配方为:鱼糜200g,猪瘦肉糜30g,淀粉20g,蛋清22g。通过改善鱼糜制品的加工工艺,克服了传统鱼糜制品在加热过程中发生的香味容易消失、腥味重、风味差等缺点,大大提高了产品品质。该产品是促进儿童健康成长的理想食品。 Child's daily meals generally lacks the protein and the mineral substance In China, they need to carry on the nutrition supplement outside the daily meals. This paper based on our country child's nutrition condition in present take the fish surimi products which are welcomed by child, delicious and nutrient-rich as raw materials. And then, by adding pork and children easily absorbed food nutrition supplements we get the products. The successful development of a no flavor, high quality and nutritional compound pork surimi products which has good elasticity, low fat content and nutritional-rich properties. Using of orthogonal experiment to identify the best recipe of child nutrition fish surimi product. The best recipe: fish surimi 200 g, lean meat 30 g, starch 20 g, egg white 22 g. At the same time, through improving on the processing, the product has over come the insufficient that the fish surimi product fragrance is easy to vanish, the fishy smell aggravates in the thermal process which would happen in the traditional fish surimi product. They cause the flavor change difference, and affect the product acceptable. This product is an ideal food which promotes the child health grows.
