摘要
红曲一直被认为具有食用和药用双重功效。红曲除用在着色、酿酒、制醋和酱油外,它还可以生产各种酶制剂。近年来,红曲菌的药用价值备受关注,利用红曲细菌开发研制各种功能性保健食品成为研究热点,对红曲的保健功能及作为调味品添加物时的加工方法作简要介绍。
Red rice is supposed to have two efficacies of edible and medicine. It is used not only in stain, vintage, making vinegar and sauce but in the enzymes' preparation. In recent years, we have more attention in the function of the fungus. To develop the functionally health foods which is used the red rice is becoming a hotspot. This article makes a cursory introduction about the red rice's health care and has a presentation for the red rice as a additional component in the condiment.
