摘要
叶黄素(lutein)为类胡萝卜素之一。自然界存在的类胡萝卜素约达600余种,在人体内发现的类胡萝卜素有仪.胡萝卜素、β-胡萝卜素、叶黄素、玉米黄素、隐黄质和番茄红素等。其中α-胡萝卜素、β-胡萝卜素等在人体内可转化为维生素A,被称为维生素A原。近年来,随着对类胡萝卜素研究的深入,发现叶黄素虽然不能转化为维生素A,但因其具有独特的生物学功能而引起人们极大的关注。许多研究结果显示,叶黄素具有保护视觉,减少癌症的发生和发展及预防心血管疾病的生理功能。
