摘要
叶黄素（lutein）为类胡萝卜素之一。自然界存在的类胡萝卜素约达600余种，在人体内发现的类胡萝卜素有仪．胡萝卜素、β-胡萝卜素、叶黄素、玉米黄素、隐黄质和番茄红素等。其中α-胡萝卜素、β-胡萝卜素等在人体内可转化为维生素A，被称为维生素A原。近年来，随着对类胡萝卜素研究的深入，发现叶黄素虽然不能转化为维生素A，但因其具有独特的生物学功能而引起人们极大的关注。许多研究结果显示，叶黄素具有保护视觉，减少癌症的发生和发展及预防心血管疾病的生理功能。
