微胶囊叶黄素理化性质及其稳定性研究 被引量:2

摘要 本文研究了微胶囊叶黄素产品的理化性质及其在光、热、pH值及氧气条件下的稳定性。结果表明,微胶囊叶黄素含水率为3.0%、密度0.39g/cm^3、粒径8—10μm、溶解度90s;叶黄素经微胶囊化后可明显提高叶黄素的光稳定性和热稳定性,减弱了pH值的影响和氧气对叶黄素的氧化降解。 The paper studied the physieochemieal properties of mieroeneapsulated lutein and its stability under different conditions, such as light, temperature, pH, oxygen. The containing water of mieroeneapsulated lutein was 3.0%, density was 0.39 g/cm^3 ,particle size was 8 - 10 μm ,and solubility was 90 s. The results showed that the light stability and heat stability of the mieroencapsulated lutein were better than lutein, and the influence of pH and the degradation of oxygen to lutein were decreased.
