摘要
建立了淀粉类食品中丙烯酰胺含量的离子交换高效液相色谱测定方法。样品中的丙烯酰胺用80%甲醇溶液提取,浓缩后经OasisHLB固相萃取小柱净化,0.005mol/L硫酸为流动相在HC-75H+阳离子交换柱上分离,二极管阵列检测器(DAD)在200nm波长进行定性、定量分析。检测限为30μg/kg,添加回收率在92%~104%,相对标准偏差小于9%。对油炸薯片、饼干、油条、烧饼等食品检测的结果与文献报道值吻合。
A simple and rapid method using ion-exchange high performance liquid chromatography (HPLC) coupled with diode array detection (DAD) was developed for the determination of acrylamide in starch-based foods. Acrylarnide was extracted by 80 % methanol, and cleaned by a Oasis HLB solidphase extraction (SPE) cartridge. For analysis, a HC- 75H^+ cation exchange column was used with 0.005 mol/L sulfuric acid as mobile phase, flow rate was 0.6 mL/min and detection wavelength was set at 200 nm. The limit of detection was estimated at 30 μg/kg, and recoveries of acrylamide from samples spiked at levels of 100~ 1000 μg/kg ranged between 92 % and 104 %. Finally, a test for commercial products such as potato crisps, biscuits, Youtiao, Shaobing showed good precision of the method, with relative standard deviations below 9 %, giving results similar with those reported in the literature.
