摘要
文章研究了浸提液pH、离心机转数、离心分离温度3个因素对挤压大豆的7S和11S球蛋白收得率的影响规律。结果表明,在试验范围内浸提液pH越高,离心机转数越高,离心分离温度越低,越有利于7S、11S球蛋白的分离提取。
The paper studied the effect of leach liquor pH, rotating speed of centrifue and centifugal separation temperature on the yield of β-glycinin and glycinin from extruded soybean. The results showed that the parameters combination of high leach liquor pH, high rotating speed of centrifuge and low centrifugal separation temperature was propitious to extract β-glycinin and glycinin.
