豆粕中抗营养因子的危害及其处理方法 被引量:1

摘要 1 作用机理及危害 经实验分析豆粕中含有10余种抗营养因子(ANFS),根据对热稳定性可将其分为两类:热不稳定性抗营养因子和热稳定性抗营养因子,其中前者包括胰蛋白抑制因子、植物凝聚素、尿素酶和致甲状腺肿因子;后者包括植物盐、胀气因子和过敏因子等,它们以不同方式对消化吸收过程不同程度的抑制作用。
