摘要
浓香型曲酒独特的生产工艺特点是"泥窖固态发酵、续糟配料、混蒸混烧……"。窖泥是浓香型曲酒酿造的基础。通过科学合理地设计窖泥配方,有的放矢地定向富集培养老窖泥中的有益微生物,经过2次发酵,加速窖泥老熟过程,培养出优质人工老窖泥,合理应用到浓香型曲酒的窖池改造中,可显著提高浓香型曲酒的质量。
The technical characteristics in the production of Luzhou-flavor Daqu liquor were as follows: solid fermentation in pits, materials mixing by distiller's grains, and mixed steaming and mixed cooking etc. Accordingly, pit mud is the base for the production of quality Luzhou-flavor Daqu liquor. In this paper, quality manmade aged pit mud was cultivated through scientific design of pit mud prescription, purposeful culture of beneficial microbes in aged pit mud, and then fermentation twice to accelerate the aging of pit mud. Proper use of manmade aged pit mud for the renovation of pits could effectively improve the quality of Luzhou-flavor Daqu liquor. (Tran. by YUE Yang) .
