水产品中有害残留物的研究与进展 被引量:1

摘要 近些年来,随着国内外对食品安全和卫生问题的重视以及高残留、高毒性、致癌、致畸等毒副作用的揭露,食品安全逐渐成为社会的广泛关注的一大热点。就此问题,本文主要介绍了水产品中孔雀石绿、河鲀素等有害残留物的性质、毒性及其检测方法等方面的研究情况,并阐述了水产品病害防治的新型措施。意在为我国水产品的质量和安全性的进一步提高提供一些相关信息和理论参考。
