摘要
采用纤维素酶和木瓜蛋白酶的双酶水解技术对茶树菇进行水解,以α-氨基氮含量为指标,通过正交实验确定了最适水解条件为:纤维素酶∶木瓜蛋白酶(0.15%)=1∶1,水解温度60℃,水解时间240min,初始pH6.0,α-氨基氮含量可达0.38g/100g。
Agrocybe Aegerila was hydrolyzed with the enzyme hydrolytic in which papain and celluclase were added simultaneously. The conditions of extraction was screened with the content of α-amino nitrogen as marker by one- factor experiment and orthogonal experiment designed. Having estabilished optimal hydrolyzing condition: radio of celluclase to papain (0.15 % ) 1: 1, temperature 60℃, pH6.0 for 240min, the content of α- amino nitrogen was 0.38g/100g.
