酶法提取花生壳膳食纤维及其性能研究 被引量:22

摘要 以花生壳为原料,采用双酶降解法提取花生壳膳食纤维,探讨了酶解的工艺条件,并对膳食纤维的性能进行了研究。结果表明,在纤维素酶用量0.4%,木瓜蛋白酶用量0.4%,温度50℃,pH6.0条件下酶解2.5h,蛋白质水解率达到70.2%,膳食纤维产率为81.5%,得到的膳食纤维具有较高的持水力、膨胀力和结合水力。 The technology of extracting dietary fiber from peanut shell was studied by two enzymes. Results showed that the hydrolyzation of protein reached 70.2% ,and the product of dietary fiber were 81.5% under the conditions of dosage of cellulose and papain were both 0.4% ,temperature was 50℃, pH6.0,hydrolysis 2.5h. The dietary fiber from this technology had higher water holding capacity,expansion and water combing power.
