摘要
使用四种不同气体阻隔性的塑料复合包装材料进行新鲜猪肉的气调包装,然后测定猪肉品质指标的变化,确定塑料包装材料的阻隔性对鲜肉贮存品质的影响,为包装材料的精确选择提供可以量化的科学依据。
The quality changes of fresh pork during the way of MAP of four plastic packaging materials with different air barrier property were studied. Through the quantification research on air barrier property of plastic ,the influence of plastic packaging materials' air barrier property on quality of fresh pork was ascertained. It provides a scientific and quantitative basis for the choices of packaging materials.
