富阳市乡村厨师协会食品卫生管理模式分析

摘要 目的探索乡村厨师协会对农村家庭聚餐食品卫生管理效果的影响。方法5个试点乡镇成立乡村厨师协会,规定协会会员有参加卫生知识培训和健康检查、主动申报和事故报告、自觉履行卫生操作要求和向事主进行卫生知识宣传的义务。分析比较试点乡镇和非试点乡镇的乡村厨师培训率、体检率、健康证持证率、农村家庭聚餐申报率和农村家庭聚餐现场卫生情况量化得分率。结果试点乡镇的乡村厨师培训率、体检率、健康证持证率、农村家庭聚餐申报率和农村家庭聚餐现场卫生状况量化得分率均高于非试点乡镇。结论乡村厨师协会食品卫生管理模式提高了农村家庭聚餐的食品卫生水平,降低了农村食物中毒事故发生的风险。 Objective To probe into the effect of the country cook association dining together to family food hygiene management in rural area. Method Five experimental unit villages and towns founded country cook association, setmg regulation that the membors have duties to participate in hygienic knowledge training and check - up, declare on self's own initiative and accident report, conscientious fulfill hygiene operation request and face the victim of a crime be in progress hygienic knowledge propagation. And country cook training rate, physical examination rate, health certificate passing and hold certificate rates, the rural area family dines together were analyzed. Results Experimental unit villages and towns country cook training rate , physical examination rate , health certificate hold certificate rates , the rural area family dines together declaring rates and the rural area family dining together scene hygiene situation quantization score leads experimental unit villages and towns without exception higher than non - experimental unit. Conclusions Country cook association food hygiene lets the food health care condition improved the rural area family dining together, the risk been reduced of rural area bromatoxism accident happening.
